At what age did children do their confirmations?
In some cases, as soon as they were baptized. Confirmations are performed by the bishop, so whenever the bishop visited - which apparently wasn't too often, in some areas - anyone who wasn't already confirmed, was taken and confirmed.

Were confirmation required and did a lot of people do it?

Yes, during the Spanish Mandate, everyone was required to be Catholic and to follow church law and receive the sacraments. If you didn't go to mass on Sundays & holy days of obligation, or if you didn't receive communion nor attend confession, or if you didn't observe the fasts (like not eating meat on Fridays during Lent), you'd find yourself in trouble with the Inquisition. Nor could a couple live together without being married, without risk of excommunication and expulsion from your community.
