Oh, Alicia, Your tamales sound almost like the ones I used to have in New Mexico. There they use their long green chiles and cheddar cheese only, but oh, they are so wonderful. Like Joseph, I lament the fact that stuff like that cannot be found where we currently live. Emilie

We make some tamales with olives, potato slices, chiles jalapeños, cheese and mole. In order to prevent the stuffing from coming out and to identify them from the usual meat and mole tamales we tie the stuffed tamales with a thin strand of corn husk at both ends. Boy are they good.
