If there is a death registration there would also exist a church death document correct?
But with Guadalajara being such a big city and lots of churches it would be difficult to find?

I have not ever found a death record, comparable to a civil record. However, it is normal for there to be church records of "sepultura eclesiástica," which may or may not give any indication of the death date.

Not necessarily.
A complicating factor is that the death occurred during the period of the Crisero War, or La Cristiada, when the Church was severely persecuted. See the WikiPedia article at https://en.wikipedia.org/wiki/Cristero_War
